thentic German Potato Salad Recipe | Warm Bavarian Potato Salad
Authentic German Potato Salad, also known as Kartoffelsalat, is a traditional Bavarian side dish made with tender potatoes, crispy bacon, onions, and a warm tangy vinegar dressing. Unlike classic mayonnaise-based potato salads, German Potato Salad is served warm and is known for its savory, smoky, and slightly sweet flavor. The warm dressing allows the potatoes to absorb the rich flavors of bacon, mustard, and vinegar, creating a comforting and hearty dish. Perfect alongside bratwurst, schnitzel, grilled meats, or roasted chicken, this classic German recipe is ideal for family dinners, Oktoberfest celebrations, barbecues, and holiday gatherings.
Cooking Method
- Place the potatoes in a large pot of salted water and boil for 15–20 minutes, or until fork-tender.
- Drain the potatoes and allow them to cool slightly before slicing into thick rounds.
- Cook the diced bacon in a large skillet over medium heat until crispy.
- Remove the bacon with a slotted spoon, leaving about 2 tablespoons of bacon fat in the skillet.
- Add the chopped onion to the skillet and cook until softened, about 3–4 minutes.
- Stir in the apple cider vinegar, chicken broth, Dijon mustard, sugar, salt, and black pepper. Simmer for 2 minutes.
- Add the sliced potatoes to the skillet and gently toss until evenly coated in the warm dressing.
- Fold in the crispy bacon and chopped parsley.
- Cook for another 2–3 minutes, stirring gently so the potatoes absorb the dressing.
- Garnish with additional parsley and black pepper. Serve warm.
