Viazi Karai is a popular street food from the coastal regions of Kenya, especially in the historic city of Mombasa. This delicious snack features boiled potatoes coated in a seasoned gram flour batter and deep-fried until golden and crispy. Traditionally served with tangy tamarind chutney and spicy coconut sauce, Viazi Karai is a beloved part of Swahili cuisine. 

The dish combines soft, tender potatoes with a crunchy exterior flavored with turmeric, garlic, and mild spices. Cooking Method


  1.  Boil the potatoes in salted water until tender but still firm. 
  2.  Drain and allow them to cool slightly. 
  3.  In a bowl, combine gram flour, turmeric, garlic powder, salt, and chili powder. 
  4.  Gradually add water and whisk until a smooth batter forms. 
  5.  Heat vegetable oil in a deep frying pan over medium heat. 
  6.  Dip each potato piece into the batter, ensuring it is fully coated. 
  7.  Carefully place the coated potatoes into the hot oil. 
  8.  Fry until golden brown and crispy on all sides. 
  9.  Remove and drain on paper towels. 
  10.  Serve hot with tamarind sauce or your favorite dipping sauce.
