Modur Pulao is a traditional Kashmiri sweet rice dish made with fragrant basmati rice, saffron, milk, dry fruits, and aromatic spices. Rich in flavor and lightly sweetened, this festive delicacy is commonly served during celebrations and special occasions in Kashmiri cuisine.
Wash and soak the basmati rice for 30 minutes, then drain.
Heat ghee in a pan and lightly fry the whole spices until fragrant.
Add the soaked rice and sauté gently for 2–3 minutes.
Pour in the water and cook until the rice is almost done.
Stir in the sugar (or honey), saffron milk, and mixed dry fruits.
Cover and cook on low heat for 8–10 minutes until the rice is fully cooked and fragrant.
Fluff the rice gently and serve warm as a festive main course or dessert.
