Perfect for long-term storage, this salsa preserves the freshness of summer produce and is ideal for chips, tacos, or everyday meals throughout the year. 

Cooking Method

 

  1. Prepare tomatoes:
    Blanch tomatoes in boiling water for 30–60 seconds, remove skins, and chop them finely.
  2. Combine ingredients:
    In a large stainless-steel pot, add tomatoes, onions, bell peppers, and garlic.
  3. Add seasoning:
    Stir in vinegar, salt, and sugar. Mix well to combine flavors.
  4. Cook the salsa:
    Bring the mixture to a boil, then reduce heat and simmer for 25–30 minutes, stirring occasionally until slightly thickened.
  5. Prepare jars:
    Sterilize canning jars and lids in boiling water before filling.
  6. Fill jars:
    Ladle hot salsa into sterilized jars, leaving about ½ inch headspace. Remove air bubbles and wipe rims clean.
  7. Process for canning:
    Seal jars and process them in a boiling water bath for 15 minutes. Remove and allow jars to cool completely before storing.
