Indian Missi Roti Recipe | Authentic Besan Flatbread

Indian Missi Roti is a traditional North Indian flatbread made with a wholesome blend of whole wheat flour and gram flour (besan), flavored with aromatic spices and fresh herbs. Popular in the states of Punjab and Rajasthan, Missi Roti has a rich, nutty flavor and a soft yet slightly crisp texture. Seasoned with cumin, ajwain (carom seeds), coriander, green chilies, and onions, this nutritious flatbread pairs perfectly with dal, paneer, vegetable curries, yogurt, or pickles. Easy to prepare and naturally high in protein and fiber, Missi Roti is a delicious addition to any Indian meal.

Cooking Method

  1. In a large mixing bowl, combine the whole wheat flour, gram flour, cumin seeds, ajwain, turmeric, red chili powder, and salt.
  2. Add the chopped onion, cilantro, green chilies, and vegetable oil.
  3. Gradually add warm water while mixing to form a soft, smooth dough.
  4. Knead the dough for 5–6 minutes, then cover and let it rest for 15 minutes.
  5. Divide the dough into 8 equal portions and roll each into a ball.
  6. Lightly dust with flour and roll each ball into a 6–7 inch (15–18 cm) round.
  7. Heat a tawa or heavy skillet over medium-high heat.
  8. Cook each roti for 1–2 minutes on one side until bubbles appear, then flip and cook the other side. Brush with ghee or butter if desired and cook until golden brown spots appear.
  9. Repeat with the remaining dough.
  10. Serve hot with dal, curry, yogurt, pickle, or butter.
