Indian Dum Aloo | Authentic Kashmiri Dum Aloo Recipe
Indian Dum Aloo is a rich and flavorful North Indian curry made with baby potatoes slowly simmered in a creamy, aromatic yogurt and tomato-based gravy. Baby potatoes are boiled, lightly fried until golden, and then cooked on low heat ("dum") in a luxurious gravy made with yogurt, tomatoes, onions, ginger, garlic, and a blend of aromatic spices including Kashmiri red chili powder, fennel powder, cumin, coriander, garam masala, and kasuri methi. Cooking Method
- Boil the baby potatoes until just tender.
- Peel the potatoes and prick them lightly with a fork.
- Heat 2 tablespoons of oil and fry the potatoes until lightly golden. Set aside.
- Heat the remaining oil and butter in a pan.
- Add the cumin seeds and let them splutter.
- Add the onions and cook until golden brown.
- Stir in the garlic and ginger and sauté for 1 minute.
- Add the tomato puree and cook until the oil begins to separate.
- Mix in the Kashmiri chili powder, coriander powder, fennel powder, turmeric, cumin powder, and salt.
- Lower the heat and gradually stir in the whisked yogurt to prevent curdling.
- Add the water and bring to a gentle simmer.
- Add the fried baby potatoes.
- Cover and cook on low heat for 15–20 minutes.
- Stir in the garam masala and crushed kasuri methi.
- Simmer for another 2 minutes.
- Garnish with fresh cilantro and a drizzle of cream if desired.
