Indian Rumali Roti Recipe | Authentic Handkerchief Flatbread

 Indian Rumali Roti is a traditional ultra-thin flatbread known for its soft, delicate texture and large, handkerchief-like appearance. The name Rumali means "handkerchief" in Hindi, reflecting the bread's paper-thin consistency and elegant folds. Popular in Mughlai and North Indian cuisine, Rumali Roti is traditionally cooked on an inverted hot wok or convex griddle at very high temperatures. Made with a combination of whole wheat flour and all-purpose flour, this light and flexible bread pairs beautifully with rich curries, kebabs, tandoori dishes, and creamy gravies. Soft, tender, and easy to fold, Rumali Roti is a restaurant favorite that can also be made at home. 

Cooking Method


  1. In a large mixing bowl, combine the all-purpose flour, whole wheat flour, and salt.
  2. Add the vegetable oil and mix until the flour resembles coarse crumbs.
  3. Gradually add the warm milk and warm water, kneading until a soft, smooth, and elastic dough forms.
  4. Knead for 8–10 minutes, then cover the dough and let it rest for 45 minutes.
  5. Divide the dough into 8 equal portions and shape them into smooth balls.
  6. Dust the work surface lightly with flour and roll each ball into an extremely thin circle, about 12–14 inches (30–35 cm) in diameter.
  7. Heat an inverted wok (kadhai) or convex griddle over high heat until very hot.
  8. Carefully place the rolled dough over the hot surface and cook for 20–30 seconds until light brown spots appear.
  9. Flip and cook the other side for another 15–20 seconds. Do not overcook, as the bread should remain soft and flexible.
  10. Fold the Rumali Roti into quarters and brush lightly with melted butter or ghee if desired. Serve immediately with kebabs, tandoori dishes, or rich Indian curries.
