Indian Kadhai Veg | Authentic Mixed Vegetable Kadhai Recipe
Indian Kadhai Veg is a vibrant North Indian mixed vegetable curry cooked with colorful vegetables in a rich tomato-onion gravy flavored with freshly ground Kadhai Masala. Named after the traditional Indian wok called a kadhai, this dish is known for its bold spices, chunky vegetables, and aromatic flavor. It is a popular vegetarian restaurant favorite that is both hearty and nutritious.
A medley of vegetables such as bell peppers, carrots, cauliflower, peas, beans, and potatoes are lightly sautéed and simmered in a thick gravy made with tomatoes, onions, garlic, ginger, and freshly roasted coriander, cumin, fennel, and dried red chilies. The signature Kadhai Masala gives the curry its distinctive smoky, earthy aroma, while a touch of kasuri methi adds authentic restaurant-style flavor.

Cooking Method
- Dry roast the coriander seeds, cumin seeds, fennel seeds, dried chilies, and black peppercorns for 2–3 minutes.
- Cool slightly and grind into a coarse powder.
- Heat the oil and butter in a kadhai or large skillet.
- Add the cumin seeds and allow them to splutter.
- Add the onions and sauté until golden.
- Stir in the garlic and ginger and cook for 1 minute.
- Add the tomatoes and cook until soft.
- Mix in the turmeric, Kashmiri chili powder, coriander powder, salt, and the freshly ground Kadhai Masala.
- Cook until the oil begins to separate.
- Add the potatoes, carrots, cauliflower, beans, peas, and water.
- Cover and cook for 10–12 minutes until nearly tender.
- Add the bell peppers and cook for 3–4 minutes.
- Stir in the garam masala and crushed kasuri methi.
- Garnish with fresh cilantro and ginger juliennes before serving.
