Cooking Method
- Heat the oil and 1 tablespoon butter in a pan over medium heat.

- Allow the mixture to cool slightly, then blend until smooth.
- Return the puree to the pan.
- Stir in the Kashmiri chili powder, coriander powder, cumin powder, turmeric, sugar, and salt.
- Cook for 5 minutes until the butter begins to separate.
- Add the water and simmer for 5 minutes.
- Stir in the heavy cream and garam masala.
- Crush the kasuri methi between your palms and add it to the gravy.
- Add the paneer cubes and gently simmer for 3–5 minutes.
- Finish with the remaining butter.
- Garnish with fresh cilantro and a drizzle of cream before serving.
