Indian Mix Veg Recipe | Restaurant-Style Mixed Vegetable Curry
Indian Mix Veg, also known as Mixed Vegetable Curry, is a wholesome and flavorful North Indian dish made with a colorful combination of fresh vegetables simmered in a rich onion-tomato gravy infused with aromatic Indian spices. Popular in homes and restaurants across India, this comforting curry is packed with nutritious vegetables like potatoes, carrots, cauliflower, peas, beans, and bell peppers. The creamy, mildly spiced gravy makes it an excellent accompaniment to naan, roti, paratha, or steamed basmati rice. Cooking Method
- Heat the oil or ghee in a large pan over medium heat.
- Add the chopped onions and sauté until golden brown.
- Stir in the garlic, ginger, and green chilies, then cook for 1 minute until fragrant.
- Add the tomato puree and cook for 6–8 minutes until the oil begins to separate.
- Mix in the turmeric, coriander, cumin, red chili powder, garam masala, and salt. Cook for 1 minute.
- Add the potatoes, carrots, cauliflower, green beans, peas, and bell pepper. Stir well to coat the vegetables with the masala.
- Pour in the water, cover, and simmer for 15–20 minutes, or until the vegetables are tender.
- Crush the Kasuri methi between your palms and stir it into the curry.
- Simmer for another 2–3 minutes, then adjust the seasoning if needed.
- Garnish with fresh cilantro and serve hot with naan, roti, paratha, or steamed basmati rice.
