Line a square pan (8x8 inches) with parchment paper.
In a medium saucepan, combine honey, peanut/almond butter, and brown sugar. Heat gently until smooth and combined.
Remove from heat and stir in vanilla extract and salt.
Add rolled oats and chopped pistachios, mixing until everything is evenly coated.
Press the mixture firmly into the prepared pan.
Chill in the refrigerator for at least 1–2 hours until firm.
Cut into squares and serve, or store in an airtight container.
