Made by churning fresh heavy cream until the butterfat separates from the buttermilk, this butter has a naturally sweet dairy flavor that complements both sweet and savory dishes. It can be prepared salted or unsalted, depending on personal preference and intended use.

Cooking Method


  1.  Chill the heavy cream thoroughly before churning. 
  2.  Pour the cream into a stand mixer, food processor, or butter churn. 
  3.  Churn until whipped cream forms and continues separating into butter and buttermilk. 
  4.  Drain the buttermilk and reserve it for other recipes if desired. 
  5.  Rinse the butter under ice-cold water. 
  6.  Gently knead the butter to remove excess liquid. 
  7.  Repeat rinsing until the water runs clear. 
  8.  Add salt if desired and mix thoroughly. 
  9.  Shape the butter into blocks, rolls, or molds. 
  10.  Refrigerate until firm before serving.
