On a clean surface, place flour and make a well in the center.
Crack eggs into the center and add salt and olive oil.
Slowly mix flour into the eggs using a fork or fingers.
Add small amounts of water if the dough feels dry.
Knead the dough for 8–12 minutes until smooth and elastic.
Wrap the dough in cling film and rest for 30–60 minutes.
Roll out the dough thinly and cut into desired pasta shapes.
