Heat oil and fry potato sticks until golden and crispy (or bake/air fry).
In a pan, heat a little oil and sauté sliced onions and bell peppers.
Add ginger-garlic paste and cook briefly.
Add tomato ketchup, chili sauce, and jalfrezi spices; mix well.
Toss in the crispy fries and coat evenly with the sauce.
Cook for 2–3 minutes on medium heat.
Adjust salt and spice levels.
Garnish with fresh coriander and serve hot.
