Wash the spinach and boil it for 2–3 minutes, then blend it into a smooth puree.
Heat oil or ghee in a pan and sauté chopped onions and garlic until golden.
Add chopped tomatoes and cook until they soften.
Add the spinach puree and cook for a few minutes.
Add garam masala and salt to taste.
Add paneer cubes and cook for 5 minutes so they absorb the flavors.
Serve hot with fresh roti or chapati.
