Heat oil in a frying pan over medium heat and lightly fry the tofu cubes until golden brown.
In a bowl, beat the eggs and mix in the minced garlic and a pinch of salt.
Add the fried tofu into the egg mixture and stir gently.
Pour the mixture into a hot pan and cook like an omelette until both sides are golden and cooked through.
Transfer the omelette to a serving plate and cut into pieces.
Drizzle peanut sauce and sweet soy sauce over the omelette.
Garnish with bean sprouts and cucumber slices. Serve warm.
