Red Potato Salad | Creamy Red Skin Potato Salad Recipe
Red Potato Salad is a fresh and creamy side dish made with tender red potatoes, crisp celery, red onions, fresh herbs, and a smooth homemade dressing. Unlike russet potatoes, red potatoes hold their shape after cooking, giving this salad a firm yet creamy texture that's perfect for picnics, barbecues, potlucks, holiday gatherings, and family dinners.
The naturally buttery flavor of red potatoes pairs beautifully with a tangy dressing made from mayonnaise, Dijon mustard, apple cider vinegar, lemon juice, and fresh herbs. Crunchy celery and onions add texture, while parsley and dill provide freshness that balances the richness of the dressing. Because the thin red skins are left on, the salad has a beautiful rustic appearance and extra nutrients.
This classic Red Potato Salad is easy to prepare ahead of time and tastes even better after chilling, allowing the flavors to blend perfectly. It pairs wonderfully with grilled chicken, burgers, steak, seafood, barbecue ribs, sandwiches, or roasted vegetables.
