Lemony Lentils with Caramelized Onions and Halloumi is a hearty, protein-rich Mediterranean-inspired dish that combines tender lentils with sweet golden onions and crispy pan-fried halloumi cheese. Bright lemon flavors balance the richness of the caramelized onions, creating a comforting yet refreshing meal. Cooking Method

 

  1. Rinse lentils thoroughly and cook them in salted water for 18–20 minutes until tender but not mushy. Drain and set aside.
  2. Heat olive oil in a pan and add thinly sliced onions. Cook on low heat, stirring occasionally, until deeply golden and caramelized (about 15–20 minutes).
  3. Slice halloumi cheese into thick pieces. In another pan, lightly pan-fry the slices until golden and crispy on both sides.
  4. Add cooked lentils to the caramelized onions and mix gently.
  5. Season with salt, black pepper, and freshly squeezed lemon juice.
  6. Toss everything together and cook for 2–3 minutes so flavors combine well.
  7. Serve warm topped with crispy halloumi and fresh herbs if desired.
