Ingredients
500g strong bread flour
1 packet (7g) fast‑action yeast
75g caster sugar
1 tsp ground cinnamon
1 tsp mixed spice
1 tsp salt
300ml warm milk
1 egg
50g melted butter
150g raisins or sultanas
For the crosses:
4 tbsp plain flour
Water (just enough to make a thick paste)
For the glaze:
2 tbsp apricot jam or honey
Cooking Method
Method
1. Make the dough
Combine flour, yeast, sugar, spices, and salt in a bowl.
Add warm milk, egg, and melted butter.
Mix until a soft dough forms, then knead for about 8–10 minutes until smooth.
2. Add the fruit
Knead in the raisins or sultanas until evenly distributed.
3. First rise
Place the dough in a lightly oiled bowl, cover, and let it rise for about 1 hour until doubled.
4. Shape the buns
Divide into 12 equal pieces and shape into balls.
Place on a baking tray lined with parchment.
Cover and let rise again for 30–40 minutes.
5. Add the crosses
Mix flour with a little water to make a thick paste.
Pipe or drizzle crosses over the buns.
6. Bake
Bake at 200°C (fan 180°C) for 15–20 minutes until golden.
7. Glaze
Warm the apricot jam or honey and brush over the hot buns for a shiny finish.
