Goat Cheese, also known as Chevre, is a soft, creamy, and tangy cheese made from fresh goat's milk. Popular in many regions of France and around the world, Goat Cheese is valued for its smooth texture, distinctive flavor, and versatility in both sweet and savory dishes.

Fresh goat's milk is cultured and coagulated to form delicate curds, which are then drained and lightly salted. The result is a creamy cheese with a mild tanginess that can be enjoyed fresh or aged for a more complex flavor. Goat Cheese pairs wonderfully with salads, crackers, fruits, honey, herbs, and baked dishes.

Easy to customize with herbs and seasonings, Goat Cheese is a favorite ingredient for appetizers, spreads, and gourmet recipes. Its rich flavor and creamy texture make it a staple in artisan cheesemaking.

Cooking Method

  1.  Heat the goat's milk to 22–24°C (72–75°F).
  2.  Add the starter culture and mix gently.
  3.  Add rennet if using and stir briefly.
  4.  Cover and allow the milk to culture for 12–24 hours.
  5.  Once curds have formed, transfer them to a cheesecloth-lined colander.
  6.  Allow the curds to drain for 6–12 hours.
  7.  Mix in the cheese salt.
  8.  Shape the cheese into logs, rounds, or small portions.
  9.  Refrigerate before serving.
  10.  Optionally coat with herbs, pepper, or spices for added flavor.
