 Tempura Fried Shrimp, known as Ebi Tempura in Japan, is a classic Japanese dish featuring large shrimp coated in a light, airy tempura batter and fried until perfectly crisp and golden. Unlike traditional fried shrimp, tempura uses an ice-cold batter that creates a delicate, crispy coating without becoming heavy or greasy. This elegant seafood dish is commonly served with tempura dipping sauce (Tentsuyu), steamed rice, soba noodles, or udon. Perfect as an appetizer or main course, homemade Ebi Tempura delivers authentic Japanese flavor with a satisfying crunch in every bite. 

Cooking Method


  1. Prepare the shrimp by making a few shallow cuts along the underside to keep them straight while frying.
  2. Pat the shrimp dry with paper towels.
  3. In a small saucepan, combine the dashi stock, soy sauce, mirin, and sugar. Simmer for 2–3 minutes, then set aside.
  4. Heat the vegetable oil to 350°F (175°C).
  5. In a bowl, lightly whisk the egg with the ice-cold sparkling water.
  6. Gently stir in the flour, cornstarch, and baking powder until just combined. Do not overmix; small lumps are normal.
  7. Dip each shrimp into the cold tempura batter, allowing any excess to drip off.
  8. Fry the shrimp in batches for 2–3 minutes, or until lightly golden and crispy.
  9. Remove and drain on a wire rack or paper towels.
  10. Serve immediately with the warm tempura dipping sauce, grated daikon, and lemon wedges.
