Ampesi is a traditional Ghanaian dish consisting of boiled starchy vegetables such as yam, plantain, cocoyam, or sweet potatoes. Widely enjoyed throughout Ghana, Ampesi is a simple yet nourishing meal that is often served with Palava Sauce, Kontomire Stew, garden egg stew, or fish-based sauces. 

The dish is valued for its simplicity, nutritional benefits, and versatility. Different combinations of yam, plantain, cocoyam, or sweet potatoes can be used depending on regional preferences and availability. Once boiled until tender, the vegetables are served alongside flavorful stews and sauces, creating a balanced and satisfying meal. 

Ampesi is a staple in many Ghanaian households and is commonly enjoyed for lunch or dinner. Its wholesome ingredients and traditional preparation make it an important part of Ghana’s culinary heritage. 

Cooking Method


  1.  Peel and wash the yam, plantain, and any additional vegetables. 
  2.  Cut them into medium-sized chunks. 
  3.  Place all the pieces in a large pot. 
  4.  Add enough water to cover the vegetables. 
  5.  Add the salt. 
  6.  Bring to a boil over medium-high heat. 
  7.  Reduce the heat and cook until the vegetables are tender, about 20–30 minutes. 
  8.  Drain the water. 
  9.  Arrange the boiled vegetables on a serving platter. 
  10.  Serve hot with Palava Sauce, Kontomire Stew, garden egg stew, or grilled fish.
