Soak Sabudana: Rinse and soak sabudana in water for 4–5 hours or overnight until soft. Drain excess water.
Prepare Mixture: Mash boiled potatoes and mix with soaked sabudana, roasted peanuts (coarsely ground), green chilies, cumin seeds, coriander leaves, and salt.
Shape Vadas: Divide the mixture into small portions and shape them into round patties.
Fry: Heat oil in a pan on medium heat. Fry vadas until golden brown and crispy on both sides.
Serve: Drain on paper towels and serve hot with green chutney or sweet yogurt.
