Piyaju | Crispy Bangladeshi Lentil and Onion Fritters Recipe

Piyaju is a popular traditional snack from Bangladesh that is loved for its crispy texture and savory taste. This delicious fritter is made with soaked lentils, sliced onions, and a blend of aromatic spices that are mixed together and deep-fried until golden brown. Piyaju is especially famous during the holy month of Ramadan when it becomes a must-have item for iftar meals across Bangladesh.

The snack is known for its crunchy outside and soft, flavorful inside. The mixture of lentils and onions creates a rich taste while spices such as green chili, turmeric, and cumin enhance the flavor. When fried, Piyaju develops a crispy outer layer that makes it incredibly satisfying to eat.

Piyaju is commonly sold by street vendors and small food stalls in cities and villages. Many families also prepare it at home because it is affordable, easy to cook, and requires simple ingredients. It is often served hot with puffed rice, chopped onions, green chilies, or tamarind sauce.

This traditional snack represents the vibrant street food culture of Bangladesh and is enjoyed not only during Ramadan but also as an evening tea-time snack. Its crispy texture, savory flavor, and comforting taste make Piyaju one of the most beloved homemade fritters in the country.

Cooking Method

Wash and soak the lentils for about 2–3 hours.

Drain the water and grind the lentils into a thick paste (slightly coarse).

Transfer the lentil paste to a mixing bowl.

Add sliced onions, chopped green chilies, coriander leaves, turmeric powder, chili powder, cumin powder, and salt.

Mix everything well to form a thick batter-like mixture.

Heat oil in a deep frying pan over medium heat.

Take small portions of the mixture and carefully drop them into the hot oil.

Fry until the fritters turn golden brown and crispy.

Remove from oil and place on paper towels to absorb excess oil.

Serve hot with puffed rice, sauce, or chutney.
