Indian Bhindi Masala is a classic North Indian vegetarian dish made with tender okra (bhindi), onions, tomatoes, and aromatic spices. This flavorful curry is loved for its perfectly cooked okra that remains tender without becoming slimy, combined with a rich onion-tomato masala. Infused with cumin, coriander, turmeric, garam masala, and a touch of tangy dried mango powder (amchur), Bhindi Masala is a wholesome and comforting meal that pairs beautifully with roti, paratha, naan, or steamed basmati rice. Easy to prepare and packed with authentic Indian flavors, it is a staple in many Indian households.
Cooking Method
- Wash the okra thoroughly and dry it completely with paper towels before slicing. This helps reduce sliminess.
- Heat 1 tablespoon of oil in a large skillet over medium-high heat.
- Add the sliced okra and sauté for 8–10 minutes, stirring occasionally until lightly browned and tender. Remove and set aside.
- In the same pan, add the remaining oil and cumin seeds. Let them splutter for a few seconds.
- Add the sliced onions and cook until golden brown.
- Stir in the garlic, ginger, and green chilies, cooking for 1 minute until fragrant.
- Add the chopped tomatoes and cook for 5–6 minutes until soft and the oil begins to separate.
- Mix in the turmeric, coriander, cumin, red chili powder, garam masala, amchur, and salt. Cook for 1 minute.
- Return the cooked okra to the pan and gently toss until well coated with the masala. Cook for another 3–4 minutes.
- Garnish with fresh cilantro and serve hot with roti, paratha, naan, or steamed basmati rice.
