Indian Roti (Phulka) | Soft Whole Wheat Indian Flatbread Recipe

Indian Roti, also known as Phulka, is a traditional whole wheat flatbread that is a staple in households across India. Made with just whole wheat flour, water, and a pinch of salt, this simple bread is soft, light, and incredibly versatile. Unlike naan, roti is cooked without yeast and puffs beautifully over an open flame, creating its signature soft texture and airy layers.

Phulka is naturally healthy, rich in fiber, and pairs perfectly with almost every Indian curry, dal, sabzi, paneer dish, or grilled vegetables. The dough is kneaded until smooth, rested to improve elasticity, then rolled into thin circles before being cooked on a hot skillet and finished directly over a flame for the characteristic puff.

Whether served with everyday meals or festive feasts, homemade Indian Roti is fresh, wholesome, and far superior to store-bought flatbreads. This easy recipe creates soft rotis every time with minimal ingredients and authentic flavor.

Cooking Method

  1. In a large bowl, combine the whole wheat flour and salt.
  2. Gradually add the warm water while mixing.
  3. Knead for 8–10 minutes until a soft, smooth dough forms.
  4. Add the oil or ghee if using and knead briefly.
  5. Cover the dough with a damp cloth and let it rest for 20–30 minutes.
  6. Divide the dough into 10–12 equal portions.
  7. Roll each portion into a smooth ball.
  8. Dust lightly with flour and roll into a thin circle about 6–7 inches in diameter.
  9. Heat a tawa or flat skillet over medium-high heat.
  10. Place the rolled roti on the hot skillet.
  11. Cook for 30–40 seconds until bubbles appear.
  12. Flip and cook the second side for 30–40 seconds.
  13. Flip once more and gently press with a cloth or spatula, or cook directly over an open flame until the roti puffs completely.
  14. Remove and brush lightly with butter or ghee if desired.
  15. Keep covered in a clean towel until serving.
