Cooking Method

  1. Cook the Lo Mein noodles according to the package instructions until just tender. Drain and set aside.
  2. Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
  3. Add the shrimp and cook for 2–3 minutes, or until pink and opaque. Remove and set aside.
  4. Add the remaining oil, then sauté the garlic and ginger for 30 seconds until fragrant.
  5. Stir-fry the onion, carrot, cabbage, and bell pepper for 3–4 minutes, keeping the vegetables crisp.
  6. Add the cooked noodles and bean sprouts to the wok.
  7. In a small bowl, whisk together the light soy sauce, oyster sauce, dark soy sauce, sesame oil, brown sugar, white pepper, and chicken broth.
  8. Pour the sauce over the noodles and toss well to coat evenly.
  9. Return the shrimp to the wok and stir-fry for another 2 minutes until everything is heated through.
  10. Garnish with sliced spring onions and sesame seeds. Serve immediately.
