Chinese custard tarts
Chinese Custard Tarts, also known as egg tarts, are a popular Cantonese dessert featuring a flaky, buttery crust filled with smooth and creamy egg custard. Commonly served in dim sum restaurants, these tarts have a delicate sweetness and silky texture, making them a favorite treat for all ages.
Cooking Method
- Preheat the oven to 180°C (350°F).
- Prepare tart shells using shortcrust or puff pastry and place them in a muffin tray.
- In a bowl, whisk eggs and sugar until smooth (avoid foam).
- Warm milk slightly and mix it with the egg mixture.
- Add vanilla extract and stir gently.
- Strain the custard mixture to ensure a silky texture.
- Pour the custard into tart shells (about 80% full).
- Bake for 20–25 minutes until the custard is set and slightly golden.
- Let cool slightly before serving.
