🌿 Mint Coriander Healthy Veg Rice Bowl

 A refreshing and nutritious rice bowl made with fragrant mint, fresh coriander, and mixed vegetables. This healthy meal is light, flavorful, and perfect for a balanced lunch or quick dinner. 

Cooking Method

 

  1. Cook rice and keep it aside to cool slightly.
  2. Blend mint leaves, coriander leaves, green chili, and a little water to make a smooth herb paste.
  3. Heat oil in a pan and sauté garlic or cumin seeds.
  4. Add mixed vegetables and cook for 3–4 minutes.
  5. Mix in the mint-coriander paste and cook briefly.
  6. Add cooked rice, salt, and lemon juice.
  7. Toss well until everything is evenly combined and serve warm.
