Tear bread slices into small cubes and set aside.
Heat 1–2 tsp oil in a pan over medium heat. Add mustard seeds and let them splutter.
Add chopped onions, green chilies, and sauté until onions turn translucent.
Add chopped vegetables like carrots, capsicum, peas, and sauté for 2–3 minutes.
Add turmeric powder, salt, and optional red chili powder; mix well.
Add bread cubes to the pan and toss gently to coat with the spices and vegetables.
Cover and cook for 2–3 minutes, stirring occasionally.
Garnish with chopped coriander leaves and a squeeze of lemon juice. Serve hot.
